Chinese in the making

I'm sorry I haven't posted in a very long time. I haven't been feeling good a lot, so that's the reason why. But I'm feeling better now and ready to get back to cooking. 

Today I made chicken, rice, asparagus and pineapple with cream sauce. I don't really have a recipe for it because I made it up as I went.

For the chicken I breaded it in flour (seasoned with salt and pepper) then egg and then panko bread crumbs. I fried it in some hot oil and then finished cooking it in the oven.

For the asparagus I sauteed it in a hot pan with some spicy sauce we had in the fridge. I tasted it and it was really spicy so I put a little bit of sour cream in it. I also added some chopped fresh pineapple.

For the rice I put the rice and water in the rice cooker.

For the cream sauce I put some sour cream and pineapple with a tiny bit of milk in a blender until it was mostly smooth.

  1. Looks great! I don't make things without recipes very much, so you are teaching me I should try to take more chances with my cooking. Good idea to lessen the spiciness with sour cream!

  2. Owen loved the flavor of this dish. Purely amazing that you made this whole thing up with no recipe. The spiciness of the saute melded great with the coolness of the cream sauce with that sweet pineapple flavor.

    I am so very glad that you are finally feeling well enough to begin cooking again. And this was a challenging recipe for sure.

    You have demonstrated very good knowledge and planning skills in your dish and excellent technique to prepare the dish. You did a wonderful job and gave us an outstanding Blog explanation.

    We are so very proud of you and the culinary skills that you are developing. It is wonderful to see your originality and the thought you put into this recipe. Extra special too... that Dad loved the taste and I too think you thoughts to mellow out the spicy taste with the coolness of the cream sauce and the sweet pineapple were a extra special touch to an interesting recipe.
