The Cheesy Post

So this is not only a good post but this is a special post because it's 2 of my mothers favorite foods- lobster and mac n cheese, put together. Also it's my first seafood recipe, if you don't count fish as seafood.

My mom said this is the best lobster mac n cheese that she has ever tasted!

I got the recipe from my Food Network magazine (March 2013).

Lobster Mac N Cheese

8 oz pasta
4 tbsp butter
1/4 cup flour
2 cups whole milk, heated
1 bay leaf
pinch of nutmeg
4 cups shredded cheddar cheese
12 oz cooked lobster

Cook pasta in salted boiling water.

Cook lobster and remove meat.









Melt butter in saucepan. Whisk in flour and cook for 2 minutes. Whisk in milk. Add bay leaf, nutmeg and 1 tsp salt. Cook, whisking occasionally, for 8 minutes until thickened. Remove bay leaf and stir in 3 1/2 cups cheese until melted. Add cooked pasta and enough of the pasta water to create a loose sauce. Add lobster.

Butter dish. Pour pasta into dish, top with 1/2 cup cheddar cheese and a few lobster pieces. Broil until melted and golden.

Vanilla Cupcakes with Chocolate Mousse and Vanilla Frosting

 So, this is the first time that I'm doing a post with a recipe that I've already make. In this instance, the chocolate mousse.

Vanilla Cake
2 sticks butter at room temp
2 cups flour
1 tbsp baking powder
1/2 tsp salt
1 1/4 cup sugar
4 eggs, room temp
1 tbsp vanilla
1 1/4 cup milk

1. Preheat oven to 350 degrees and line cupcake pan with liners.
2. Whisk flour, baking powder and salt together.
3. Beat butter and sugar in bowl until light and fluffy. Beat in eggs one at a time. Beat in vanilla. Add in flour mixture and milk, alternating.
4. Fill cupcake cups 3/4 full. Bake 20-25 minutes until golden brown and toothpick comes out clean.

Vanilla Frosting
2 sticks butter, room temp
Pinch of salt
3 cups confectioners sugar
1 tbsp vanilla
1-2 tbsp milk

1. Beat butter and salt until smooth and fluffy. Gradually beat in confectioners sugar until smooth.
2. Add the vanilla and increase mixer to medium high speed and beat until thick.
3. Add milk a little at a time and beat until the consistency you want.

Homemade Pizza

Sometimes we use different styles of cooking. This one was Italian. Homemade pizza.






We topped the pizza with onions, green pepper, mushrooms, cooked italian turkey sausage, sauce and cheese. 

Dad vs. Mom Secret Ingredient: Chocolate

So this time it was a Dad vs. Mom competition and I was the judge. We had m&m's, hershey's bars and hershey's kisses. Mom seized the chocolate sauce and made it hard. She started over and broke the bowl the second time. Not a good day for Mom. She lost.

Here is Mom's dish. It was an ice cream sundae with Dad's fudge sauce, people shaped banana slices, m&m candy and chocolate shavings.


Here is Dad's dish. He made 3 different treats. One was graham cracker sticks with chocolate sauce, coconut and m&m's, the next was graham cracker sticks with chocolate sauce and marshmallow goo. The third was cheez-it crackers with chocolate sauce and m&m's. 


When I first saw Mom's I thought "A 2 year old could make this in a minute". 


When I first tasted Dad's I spit it in the garbage. 




In the end, Dad won because Mom's dish was very simple and didn't taste very good.
