The Cheesy Post

So this is not only a good post but this is a special post because it's 2 of my mothers favorite foods- lobster and mac n cheese, put together. Also it's my first seafood recipe, if you don't count fish as seafood.

My mom said this is the best lobster mac n cheese that she has ever tasted!

I got the recipe from my Food Network magazine (March 2013).

Lobster Mac N Cheese

8 oz pasta
4 tbsp butter
1/4 cup flour
2 cups whole milk, heated
1 bay leaf
pinch of nutmeg
4 cups shredded cheddar cheese
12 oz cooked lobster

Cook pasta in salted boiling water.

Cook lobster and remove meat.









Melt butter in saucepan. Whisk in flour and cook for 2 minutes. Whisk in milk. Add bay leaf, nutmeg and 1 tsp salt. Cook, whisking occasionally, for 8 minutes until thickened. Remove bay leaf and stir in 3 1/2 cups cheese until melted. Add cooked pasta and enough of the pasta water to create a loose sauce. Add lobster.

Butter dish. Pour pasta into dish, top with 1/2 cup cheddar cheese and a few lobster pieces. Broil until melted and golden.

    1. Thanks. I know almost everybody loves lobster mac n cheese so I figured this would be a good one. Plus it's my first seafood dish. Not only on my blog but in all time, if you don't count fish as seafood.

  2. Chef Owen this is a new direction for you... a wonderful/delightful idea and very thoughtful of you to make one of your Mom's favorite dishes too. Your did an outstanding job of taking us step by step through the Food Network recipe and clearly show an deep understanding of the cooking techniques involved in preparing this dish. Once again I love your presentation and I will be following your blog further so I may share in hearing other comments from some of the other Bloggers on this dish and your comments too.

  3. Wow! That looks really good! I've never had that before, I've never even bought a lobster before!

    1. Well, I prefer my lobster fresh. I had a lot of fun trying to get that thing in the water. True story- when I tried to get that lobster in the water it got it's claw into there like "no, I don't want to be cooked!" and my mom was just kinda freaking out. So I just did it all myself.
